    Asafoetida powder is often used in Middle Eastern and Indian cuisine and is regarded as an Indian spice. The majority of it is cultivated in Iran and Afghanistan, where it first originated. Asafoetida, a spice derived from the dried sap of the ferula plant, a kind of big fennel, contains up to 10% essential oils that are mostly sulfur compounds. It has an overpowering, powerful odor that is sometimes described as “fetid.” Because of its peculiar smell, people refer to it as “hing” or “devil’s dung” when it’s raw.
